This is also a good opportunity to update the setup-java action to v3 see for example https://github.com/ome/action-gradle/blob/main/action.yml#L20 (distribution is now required) or use the action-gradle.
The current version of setup-java (v1) uses the deprecated set-output command.

I'll push the infrastructure commits to a separate PR as this made me realise the Gradle workflow is currently broken

All the CI-related changes have been extracted to #106 which can be reviewed immediately.
This is not expected to be merged as it is as it should likely be assessed together with the related logback/slf4-api changes.
