some docs refactoring

Proposed changes:

• addresses https://rasahq.atlassian.net/browse/ENG-538
• addresses https://rasahq.atlassian.net/browse/ENG-537

This is a fairly significant refactor of the docs. Intention is to have a clean path through the "getting started" and "key concepts" sections, with links out to the dm1 section "key concepts -> building classic assistants" when we feel it will hep the user (e.g. if they're wondering where something went).

• The "LLM" subsection has been removed. Intent classifier went to the classic section (just under the normal list of components). Intentless and docsearch policies went to key concepts -> policies, configuration got combined with the rest of the config section.
• Slot mapping information has been removed from the domain page. We may choose to re-add it.
• Started working on an overview page of CALM.

Status (please check what you already did):

• added some tests for the functionality
• updated the documentation
• updated the changelog (please check changelog for instructions)
• reformat files using black (please check Readme for instructions)

Thanks for this massive overhaul. The new sidebar makes sense to me 👍🏻 and thanks a lot for keeping a list of TODOs. I can take care of creating the tasks (I will probably group a few of them together when it makes sense)
