This PR merges the latest changes from the development branch making the contents of repo.json reflect the compatible changes from the O3DE 2310 release.

  • minor grammar updates
  • use GitHub url instead of broken doc URL
  • exclude XR test project because I have not verified it is compatible with latest O3DE 2310 and if it is reliable and useful enough for every user to see in the Project Manager
