[Docs] Find new applications examples for the docs

@lucaferranti what do you think of the current state of the example section in the docs ? (look at the dev version there: https://lrnv.github.io/Copulas.jl/dev/ i did not pushed a new release to stable yet, so you can compare with stable directly).

If this is good for you, then please close this. Otherwise I can continue thinking of a few examples to add. Also consider the additions done for #142 that are more "spread out" in the documentation.

I think the examples section looks much better now and I'm satisfied.

I cannot close this issue, but I've marked the box in the reivew checklist and notified the editor that the paper is ready from my side

Reoppend because we have a last example to add before pushing a new version fully, will not take long IMHO.
