What this PR does / why we need it:
OTel data model uses severity_text for reporting log level. Loki's OTLP endpoint also parses it as structured metadata, but the log level detection feature does not look up this field. This pr updates the look-up list to include severity_text

I think we should also add SeverityText. Some applications also use severityText.. Can you please include possible cases?

closing this since detected level already looks at serverity_number
