LGTM! In terms of publishing wheels, what were you thinking? CPU wheels now, and then think about GPU wheels after?
For what it's worth, I think it would be okay to just publish one version of the GPU wheels (per CPU arch?) using CUDA 12 under jax-finufft-cu12 or something. We'd want to do lots of testing, however!

This PR updates the publishing workflow to build wheels for ARM macs, and use a more secure pathway for uploading to PyPI.
