2025-03 and 2025-06 SimRel Release Schedules #32

This adds SimRel release schedules for the 2025-03 and 2025-06 releases. They are adapted from the schedules for the 2024-03 and 2024-06 releases. The planning council agreed on not deriving from these schedules (https://github.com/eclipse-simrel/.github/blob/main/wiki/Planning_Council/2024-11-06.md).

Once this is approved and merged, I will create the according Google calendar entries.

@HeikoKlare I have a few review comments in the MoM. I've created PR #33 which esentially captures the changes - and if you are fine, can be pushed directly. Thanks!

@HeikoKlare the 2024-03 M1 date means that Orbit + EMF has to be completed on Dec 31st (-3 day) and Platform's M1 build will be Jan 1st (-2 day) (delivered on Jan 3 to release train (0 day)). I think we should reach out to Platform, Orbit and EMF teams before approving this to make sure that someone will be able to handle this releng work during that period. If those dates do cause a problem, the alternative is to extend M1 by a week but keep M2 on the date you have.

cc: @akurtakov (Platform) @merks (EMF+Orbit) as representatives for those project (I am officially the Orbit lead, but Ed handles all the time critical releng work for Orbit, so I leave him to answer for both EMF + Orbit)

Thank you all for the confirmation! And since we had no further objections on the scheulde during the last week, I conser it approved.

We seem to have always accepted that the link to the participating projects is broken until that page is created (that's why the markdown check fails), so I would also keep it like that. In case there are any objections on that, feel free to let me know and we can have a follow-up on that.
