Switch to Alpine Linux

Switched to Alpine linux to reduce image size (went from 181MB to 3MB). Everything is working really well, so going to bump this to 1.0.0

env vars and new time settings!

Updated version. Now allows end-user to set the env vars of the MQTT server (has defaults same as before), and now sends the time as the images local time zone)
