Yo, Made a start in the Consistency update. It's a massive task and these are the first updates. Im splitting this up into multiple PR's. This part Was the /user guide portion of it. I did however left out a couple as noted below :

Payjoin FULLY SKIPPED IN THIS PR + Needs rewriting fully.
WooCommerce FULLY SKIPPED need someone with woocommerce making Lightmode Screenshots
Shopify FULLY SKIPPED Needs shopify access
Will add these points to #1089 as bullet points.
