docs(examples): Add More Tests

Description

• Updates runnable examples with more tests and removes the last remaining data files

Motivation and Context

Now every example that doesn't have a dependency on a downstream system can be run with substation test.

How Has This Been Tested?

Run substation test -R from the examples directory.

Types of changes

• Bug fix (non-breaking change which fixes an issue)
• New feature (non-breaking change which adds functionality)
• Breaking change (fix or feature that would cause existing functionality to change)
