WHAT
As Mountebank is being deprecated we're looking into moving off it. As my firebreak project I've been building a drop-in replacement (which we can change over time to work more like we want it to work). This PR proves that the tests can pass using my replacement.
HOW
My replacement has a git repo: https://github.com/alphagov/http-configurable-mock-server and I'd ideally like it to go through a code review before releasing it on NPM but at the moment it's installed directly from Github.
