To avoid issues with Smartling, all text MUST conform to GitHub-flavored markdown. This means removing all inline MDX templating and relying on basic Markdown where possible.
This PR also replaces all list tables with standard Markdown tables so that translators see the proper context while translating. We should follow up this change with a review of our use of tables.
