Remove _v2 from metadata

_v2 gets the ✂️

Commit 1 is mostly automated. Hopefully there's nothing to see there.

Commit 2 is a straggling update of the ESRI connector to use the new metadata format. We barely use this, so I'm not terribly concerned about the details.
