String Replace optimization

I'd like to suggest using a string replace gulp component such as https://github.com/lazd/gulp-replace to really make this self-contained.

Well, internally we actually generate the theme using Yeoman so we aren't doing the string replace. If you want to add that and submit a pull request, I'll consider adding it, but since it isn't a workflow issue for the way I use it it'll be a pretty low priority for me to look into it myself.
