Error: During XCP-NG 8.3(RC1) installation, at around 50% mark, this error appears:
failed to add new efi boot entry, No space left on device.

Resolution: Install using alt-kernel, I did read online that resetting bios to default settings could help with the issue but I did not do this.

One thing to note, I could boot into it after the error but my root password did not work so I could not use it.

So it failed with the main kernel but worked with the alt kernel? Have you tried again with the main kernel since? If you can reproduce, can you extract logs before rebooting? https://docs.xcp-ng.org/troubleshooting/installation-upgrade/

Having a similar experience here on a Mac mini 2014. Installer gives me a slightly different variant of the error at around 50%:

Failed to add new efi boot entry: Could not prepare
Boot variable: Invalid argument

Of course all internal drives were completely wiped before launching the installer. After conforming the error it will let me boot into the console, seemingly working fine, but not accepting the password I set.

Alternative kernel didn't work in this case unfortunately.
