OAS rendering for arrays of objects

So I found this rendering code that will render the object keys using the properties. However unfortunately this breaks down when there is an array of objects that we would like to describe. See credentialTemplates at the bottom of create workflow

The group discussed this on the 2025-01-14 telecon and acknowledged that this is a bug that needs to be fixed that should have a fairly straightforward fix (add the code to render objects).
