Replace readme example image with another st7567 display

I'm going to add a driver for the whole gfx_pack (rgb + 5 buttons), which will be based on a st7567_rs driver, so to avoid confusion I'd like to change example image to another st7567 display working with this driver.
So, if you use driver with another st7567 display please update example picture in readme.
