Starting the proxy with --log-to-file fails with bundled app (not tauri dev).
Unable to open rpc_proxy.log. read-only file system.
Log should be written in Tauri AppDir https://tauri.studio/en/docs/api/js/modules/path/#appdir
$HOME/Library/Application\ Support/tdex-dashboard on MacOS
