In scenarios where I know my opponent's exact team composition in a challenge, including their IVs, EVs, and moves, is it possible to manually input this data? Is it also possible to make it an automatic process?

No that is not possible. For what reason do you want to do this? Is it to give the bot the best chance at winning by eliminating unknowns?

I might accept a patch that does this is a reasonable way
