@dmitrym0 was not able to get pdf-tools to compile from the command-line (or, equivalently, speed-test.

I think this explains how Org robustly builds on multiple systems. The same may not be possible with pdf-tools.

It builds fine from M-x package-install so we're likely missing something Mac specific. Needs to be investigated.
