While creating a new transaction, there is no field for setting the payment method. Why?

Payment methods are defined for account types. By default, there are no payment methods for cash accounts, only for bank accounts. You can change an account's type under Edit Account, or define a new payment method (Settings → Manage → Payment methods → New payment method).

How do I add a shortcut for creating transactions to the home screen?

How do I create a transfer between two accounts?

When I create a new transaction, why is the focus on the Payee field?

The Autofill feature allows to quickly create new transactions based on the last transaction for the same payee. When it is activated, focus is set on the Payee field, with the assumption, that in most cases, you would start with the Payee, in order to have the rest of the information filled in. This behavior can be switched off in the Settings: Autofill -> Set Focus on Payee .
