I was just wondering if there was any way of quantifying the number of movements initiated by the fish whilst being tracked? Would this be the frame segments or is that randomly assigned?

Hey! This does not seem like a bug to me :-D Can you be more specific as to what you mean by movements? Frame segments are periods of consecutive/uninterrupted tracking (https://trex.run/docs/run.html#consecutive-segments, although this part is not very well-written it seems to me now).
