Safe need our latest update after migrating to Sepolia.

safe-core-sdk is currently broken, still trying to use Goerli

PR: safe-global/safe-core-sdk#691

safe-core-sdk-demo is also broken because of Goerli - this is the changes for v2.9.0 of the SDk

PR: 5afe/safe-core-sdk-demo#47

When safe-core-sdk onramp kit has been updated to use v2.11.0, update safe-core-sdk to latest onramp kit version, for Sepolia support
