How to expand selection made using meow-beginning-of-thing or meow-end-of-thing?

Let's say I do meow-end-of-thing -> p to select until the end of the paragraph. Now I want to expand the selection so that the next paragraph is selected as well. But if I do meow-end-of-thing-> p again it will reset the selection and the first paragraph won't be selected anymore. Any hints for this? Thanks.

You can't. THING selections are not expandable. But for this particular case, you can do forward-paragraph.
