Bump dependency versions

The recent vulnerabilities in the code base could not be addressed by standard npm upgrades and required “overrides” of specific packages in package.json.
Thoroughly transitioning the various dependencies to their latest versions should facilitate the app maintenance down the road.
Especially, this issue will transition React to v18.
