Currently some field options are set using JavaScript. It's possible to create ACF fields programmatically using PHP on the server side, for example with this library. There should be a server-side check to that the field options are always set correctly, even if the field is not registered using the WordPress admin panel.

I just need to find the right filter where to put this functionality.
