I have also encountered this, and this indeed causes a HUGE problem since my math snippets depend on the scope, and in this case, the scope is totally wrong and the snippet behaves randomly. This need to be fixed.

I am having exactly the same issues. I tried to disable Markdown+Math and the syntax highlighting was back to normal. It appears that the vscode has the correct built-in grammar for both single and double dollar signs. It might be a good idea just to use the built-in grammar instead of defining a custom one.
