[Help] Running dockerized geonetwork stateless

We are looking into running the running docker-geonetworks stateless with google cloud storage (s3) as the file storage for geonetwork.
Any pointers of how this can be set up using this repo as a starting point? We can't use gcsfuse or similar to "fake" the filesystem.
