My understanding of this is extremely hazy, but when someone assigns me a task, in Outlook 2013 there is an "Accept" button. https://msdn.microsoft.com/en-us/library/cc463886(v=exchg.80).aspx
What this seems to do is create a Task object in the local folder, and send a message to the delegator of item_class IPM.TaskRequest.Accept. https://msdn.microsoft.com/en-us/library/office/aa204771(v=office.11).aspx
Then it shows up in the delegator's task list as "accepted", and future updates to the task (complete or percentage_complete) show up in their list (possibly as a result of IPM.TaskRequest.Update messages?).
