I was trying to edit the FlexAsio to correct a buffer issue, but when I saved the file to the defaul .toml file, its made it so when I try to use it for a guitar amp program, the inputs are blank and cant be changed.

How can I set it back to default?

Ive already tried uninstalling, reinstalled, restarts etc.

ok, I figured out I had to delete the file it created in Users/(me) that could only be found in a search, and reinstalling it fixed the problem. I then tried to change JUST the buffer, but the same problem occurred.... where is the Flexasio.toml located? Can it just be edited manually?

This is explained in the documentation. But from the looks of it you already found it.

Can you provide a log with the configuration that is malfunctioning?

Note that if you are attempting to set a buffer size that is unrealistically low, it is normal that you run into issues. Try using something reasonable (e.g. 1024) first to see if that works.
