Sausage gravy requires mushrooms????

I have never used mushrooms while making sausage gravy, I've never seen a recipe for sausage gravy that includes mushrooms. A typical sausage gravy is your sausage (usually creates enough fat on it's own but sometimes you need more and a lot of apocalypse sausages contain less fat, and the recipe allows non-sausage meats so I can see why additional fat is included), flour to thicken, milk, and maybe some salt and pepper although I like to jazz mine up with a bit of garlic and sage.

Never have I seen it include the difficult to find in Cataclysm mushrooms. Is there reasoning behind this or should the recipe be edited to remove them?

Mushroom gravy is a thing that exists and could be a recipe worth adding, but it is not the same thing as sausage gravy.
