Subject might be a bit confusing, so here is situation.
I currently have only two specific labels - radarr and sonarr - on remote torrent adder and qBittorrent.
Rest of torrents, I just keep them not labeled(uncategorized in qBit), but there is no way to select "No label" or "Uncategorized" from remote torrent adder.
It will always apply either radarr nor sonarr.
If I remove both labels from the list then the label does not get set, leaving added torrent as "Uncategorized", but I think that is a bit crude and once I start adding more labels/categories then it would quickly become non-viable.
I assume it would be not too hard to have "No lable" or empty item always present in "Directory" and "Label" dropdown.

Currently, the only way to "not set" a label is to click the red (X) button:
But clicking this button also permanently clears out all the labels, and next time the plugin won't remember them. That's not what we want.
I think until this feature gets implemented, a possible workaround would be to create a label and call it unlabeled or none, and have the client react to this label in a certain way (put it in a certain global downloads folder, for example)
