Running the tutorial command gives the following warning:
Unable to find image 'bids/example:0.0.4' locally
docker: Error response from daemon: [DEPRECATION NOTICE] Docker Image Format v1 and Docker Image manifest version 2, schema 1 support is disabled by default and will be removed in an upcoming release. Suggest the author of docker.io/bids/example:latest to upgrade the image to the OCI Format or Docker Image manifest v2, schema 2. I also tried the image bids/example:unstable, but it crashed with a python error

just to check: your error message above mentions version 0.0.4 but latest should be 0.0.7: is this a copy paste error on your side or something else?
will try to fix but this will likely not happen soon (as in definitely not this week) and we have plans to update the example in any case (make the image much smaller and simpler).
I may also move this issue to the repo for the bids-app/example
