NestJS: Investigate framework-specific logging

As highlighted at #1857 (comment), we don't have access to our logger in the ArcjetGuard. I think NestJS also provides a logger that can be injected, but we'd need to convert our format to their format.

We should look into this in the future for a more native NestJS experience.
