swift: Migrate to Swift Testing #3

Now for the Swift wrapper we're using XCtest which is only for MacOS, but the community is pushing more Swift Testing.

Before start transitioning check:

CMake integration
other platforms support such as Windows
VS/ VScode/

pminev added the enhancement label

the priority of this is more or less bound to #2
If we decide to go with #2, we'll also do this issue
