There are two steps necessary:

Add an MQTT Broker to the docker-compose file. In the ionic-showcase app we use mosca. See how to do it here: https://github.com/aerogear/ionic-showcase/blob/master/server/docker-compose.yml#L13-L19
Replace the code in the server where we set up a new PubSub() with code similar to that found here: https://github.com/aerogear/ionic-showcase/blob/master/server/src/subscriptions.js#L10-L33
