It's not quite right. The value SHOULD be hostname.
The actual x you set as specifier.

settings put global private_dns_mode hostname
settings put global private_dns_specifier one.one.one.one

private_dns_mode can be either:
off
hostname
opportunistic

Last one is same as "Automatic" in phone settings.

I already used the settings get global private_dns_specifier command and it says key not found as mentioned first

Okay I was looking into this and it seems you can set anything you want as a variable, even if it's not a valid system one, so the problem to me seems to have happened when you're setting the variable using:

settings put global private_dns_specifier one.one.one.one

When I copied and pasted the command in the terminal, I got an error, but when I entered it manually, it worked. There may be an issue while copying/pasting the command (maybe an extra line break). Can you try the put command again manually?
