We should consider allowing themes, plugins, or administrators to disable FSE for individual post types.

For example: maybe you use a plugin that establishes a custom post type. If that plugin isn't FSE-compatible, but the rest of your site is, it would be great to just turn FSE off and rely on the plugin's legacy templates for just that post type.

#27632 should be able to resolve this. For example, for a post type posttype, the capabilities edit_single-posttype_templates, create_single-posttype_templates etc could all be mapped to do_not_allow.
