I believe I had similar problems with other implementations as well.

The homebridge Thermostat is difficult to keep in sync with the vehicle.

Personally I would prefer the option to have a check box that hides the thermostat implementation.

For climate a check box to have climate show us as an on off switch or on off fan.

The video shows me setting the climate in home. It goes back to off by itself but the climate in the car does turn on.

I think I also noticed something similar after moving sentry mode to a security system. If you close the home app and reopen it, it's correct.

I don't understand enough about how Homekit or Homebridge works to know what's actually going on, but it's interesting that you have observed this elsewhere too.

If I can't make it reliable I'll add the option to switch to a switch.
