Can you point me at where these sensors are defined? Are they only in the LRR messages?

The loop 4 of every sensor is the tamper

FYI I think you can do this already: https://github.com/TD22057/ad-mqtt/blob/main/run.py#L47-L51
I'm not sure every RF device has a tamper switch so I don't think it makes sense to make them automatically.
