Feature request: @remote-ui/testing/matchers for Vitest

Hey folks,
it seems that @remote-ui/testing/matchers adds matchers that work only with Jest. It would make our lives much easier if you guys could also add support for Vitest. We test our codebase with Vitest and had to add Jest just to test UI extensions.

Turns out it was an issue in our vitest settings. They are compatible.
