Practically it seems like some casual users wouldn't want to create and connect lens-up to an Azure database, would it be a good idea to add option for local databases like LocalDB for pc users, or SQLite with .NET MAUI for mobile deviced.

Hello, good idea. It's possible to connect application to your local database. You just have to use azurite (https://github.com/Azure/Azurite). On this video I hosted whole services in my local network, and don't use azure cloud at all. I'm going to adjust current documentation how to run it in that way :)
