Please provide the detailed description of the feature being requested and
outline the use cases.
It would be very useful if I can use the Recognition tool when I monitor the 
channel (audio call between two parties to be recognized)
How to do that?

I agree that the described functionality would indeed be useful. However, I 
don't think it's achievable now. A new Asterisk module or application should be 
written for that. Perhaps it will be better if the Generic Speech Recognition 
API of Asterisk could be used for monitoring as well. Anyway, I'd suggest to 
discuss such ideas with others probably on the Asterisk speech rec mailing list 
or using the UniMRCP discussion group.
