Document (or contextual help) what's in each type of Stack #194

Right now it's effectively impossible to tell what's in a particular stack before you use it.

Some options to help:

make a documentation page with a list of packages and/or comparison-table
put something into the associated github repos that's both public and easy to point at (e.g., referencing a dockerfile that then references an environment.yaml is not easy)
