Add common konnect category to Konnect CRDs

Problem statement

In order to easily list all Konnect resource from the cluster it would be beneficial to add a common category for Konnect CRDs so that they can be retrieved with 1 kubectl invocation.

Acceptance criteria

• As a user I can use 1 kubectl invocation to get all Konnect resources from the cluster
