Most game managers include the option to set a scheduled time or times like a specific time of the day or like every x amount of hours where the server will be gracefully shutdown and do automatic maintainance.
In case of Ark that would be a SaveWorld followed by a DoExit (Do a hard proces shutdown if the server does not shutdown within a reasonable time after the DoExit command). After that make a backup of the ShooterGame\Saved folder preferred in a compressed format like a zip file or with a proper backup like a Windows file backup. After that start SteamCMD and try to update the server files. And as last start the server back up.
This help server owners who are not always able because of school/work or other real world obligations to maintain a server that at least keeps itself running when there are updates made by the devs of the game or the devs of the mods. Also having backups makes it possible to revert to something when server files get corrupted (as currently is a known issue in ASA).
