e2e - setup API intercepting with SSR

What would you like to be added:

cy.intercept only intercepts the CSR data. To be able to fully test, intercepting the SSR data would be more meaningful

Why is this needed:

• This is needed to fully cover the state of the website right from the very first render (Server side)
