Test surya_ocr for better performance

https://github.com/VikParuchuri/surya - looks pretty great; if we gonna use it we're no longer 100% in the browser but I think it still might be fine for some users - as long as one ensure SSL + no-storage safety when processing docs before sending them out to LLM

After short tests - Surya is giving significantly better results than tesseract - also bc. it support different text layouts etc

Another tool worth checking would be https://github.com/VikParuchuri/marker - which is based on surya but doing a markdown concersion right away
