We need a thin API around surya-ocr (should be separate project, Python) to implement #56

Data anonimizatiom could be part of this app too by integration with ollama

I think the marker-api is great therefore we no longer need to build the separate server for it. Maybe there's a value in the LLM integration however I think it's gonna be like +5% coolness over marker-api only
