The yellow blocks are meant to be transparent glass, and the blocks above the hoppers leading into the composters and under the yellow structure are chests.

Those are pumpkin stems.

Signs, certain items in item frames, repeaters and rails look funny. The block the sign is on is white stained glass, but it renders as opaque.

The problems persist even when my resource pack is disabled.
I'm running Optifine + Optifabric 1.15.2 on Fabric with a few other mods (Carpet Mod, MiniHUD, Litematica, Tweakaroo, Worldedit etc.), none of which interfere with rendering. I'm trying to use Octray e94c866 on a GTX 1050 2GB

In my opinion, that's a really cool rendering bug!
Anyways, if you are still having this issue try this:

  1. For now, get rid of all your mods. See if it works with just Optifine
  2. Try using 1.12.2 Optifine F5 (the latest version with for 1.12.2)
  3. Try resetting all of Optifine's settings (you can do this by going into your .minecraft folder and deleting optionsof.txt and optionsshaders.txt) You might want to backup those settings just-in-case.
    If that doesn't help, make sure you have the latest drivers for your graphics card.
    Also try updating to the latest version of Octray.

Also, all of those mods (except MiniHUD) do interfere with rendering, because they are injected right into the core .jar of your Minecraft version. (why it takes so long for the game to launch when using forge or fabric)
